IT’S WINTER!!!
I’m so sick of the heat, that having frozen toes in the morning doesn’t faze me in the slightest! At least with the cold, you can pile on more sweaters and blankets…but what do you do when it’s too hot?
Also, this weather is perfect to eat warm, comforting meals like stew, lasagna, rice pudding, etc., so I guess this recipe comes at a perfect time!
Ingredients
- 500g chicken, bone in
- 1 small onion, diced
- 7-8 curry leaves
- 1 green chilli (slit in half)
- 4 garlic cloves, crushed
- 4 cardamom pods
- 1 inch piece cinnamon stick
- 200g potatoes, cut into small chunks
- 1 tsp each, cumin powder & coriander powder
- 1 cup thick coconut milk
- 4 tbsp coconut oil
- Salt as needed
- Slit green chillies/ginger slivers, to garnish
Marinade for chicken:
2 small onions, 4 green chilli, 5-6 garlic, 1-inch ginger, salt, water – blend
Method
Marinate the chicken for 30 minutes using the marinade given above.
Heat 4 tbsp coconut oil in a heavy-bottomed pot and sauté the onions, curry leaves, slit green chilli, crushed garlic, cardamom and cinnamon.
Once the onions are translucent, add the chicken and diced potatoes, and add enough water to cover the chicken.
Season with around 1 tbsp of salt, cover, and simmer on low heat for 15-20 minutes.
Add the cumin and coriander powders, and the coconut milk; and simmer, uncovered, for 10 minutes on medium heat.
Add salt according to taste, and garnish with the slit green chillies and ginger slivers.
Serve hot with steamed white rice, or naan.
