These mini cheesecakes are SO DECADENT! Rich and creamy with chunks of Oreo in every bite…IT’S A DREAM!
Making them would also be a fun activity to do with children, because the recipe is really easy to follow and the little ones would enjoy making these cute and yummy cheesecakes.
If you aren’t too fond of Oreos then you can replace them with any of your favorite cookies or even use a proper graham cracker base, and swirl in some Nutella or jam to replace the crushed Oreos in the recipe.
I hope you enjoy making (and eating!) this as much as I did!
Ingredients
- 260g cream cheese
- 1/3 cup sugar
- 1 egg
- 1 egg yolk
- ¼ or ½ cup crushed Oreos (big pieces)
- 1 tsp vanilla extract
- 12 Oreos
This recipe makes approximately 12 mini cheesecakes.
Preheat oven to 160°C and line a cupcake tray with cupcake liners.
Using a hand mixer, beat the cream cheese until smooth. Add the sugar and vanilla extract and beat again. Scrape down the sides of the bowl with a spatula and add the egg and yolk one at a time, using the spatula to mix them together with the cream cheese. Fold in the Oreo crumbs.
Place an Oreo cookie at the bottom of the cupcake liner and pour the cheesecake mix into each liner.
The cheesecake doesn’t rise, so fill it to the top of the cupcake liner.
Bake for approximately 15 minutes, or until the edges of the cheesecakes are set and the centre jiggles slightly. Leave to cool in the trays, and then chill in the fridge for a minimum of two hours.
Serve cold.
Note: Please do not use cheese spread. The texture and taste is completely different, which would alter the cheesecake drastically.
